Chef’s Note

A piping bag is a cone-shaped bag, made from disposable plastic or reusable cloth, that is used to portion out soft or liquid foods such as this ricotta cheese filling, deviled egg filling, cookie dough, or frosting (it is often used for cake decorating). A hole is cut at the pointy end of the bag and the food is squeezed out through the hole. Piping bags can be fitted with metal tips to make decorative shapes, such as flat lines, star shapes, or rounded edges.

Makes 1½ cups

2 quarts whole milk

3 tablespoons white vinegar
